Remember when I made double the recommended serving of quinoa on Thursday?
Then promised (and failed) to eat it Friday morning for breakfast? (And had a smoothie instead.)
Well tonight, it was put to good use.
Neither of us really felt like “cooking” but we had ample food to prepare a meal without spending more money on groceries or take-out. (We had 2 casualties to throw out tonight, so we wanted to make sure we used up as much as we could! My sincerest apologies ear of corn and package of fresh basil. Your time came too soon.)
So naturally only one thing seemed a logical choice for dinner.
Smorgasbowl – Quinoa Edition.
In the mix?
- Rotisserie Chicken – pulled and chopped
- Chopped red onion
- Balsamic Vinegar
- Goat, parmesan and mozzarella cheese
While I was busy at work pulling the chicken (while gagging even though it was fully cooked), boyfriend chopped up the red onion and threw it in a saucepan. He then stirred in some balsamic and baby arugula then the chopped chicken, and finally the leftover quinoa making it one, big, happy bowl. The cheese was added last and mixed right in.
We split it up and served it into bowls (clearly), and enjoyed!
Delicious, nutritious, and very filling. Not to mention flavorful! The balsamic and goat cheese mixed with the sweet red onion was SO tasty! I downed my entire bowl (and a chocolate milk on the side!)
Time to do the dishes, watch a documentary on Ben & Jerry’s, then put away the spoils of our travels to the Outlets today…
